Mango and Coconut Gummies Recipe

A simple and delicious gut loving treat that the whole family will love. 

Mango layer ingredients:

  • 2.5 tbs Gelatin
  • 5 tbs filtered water
  • 400g mango (fresh or frozen)

Mango layer method:

  1. Mix gelatin with water and allow to ‘bloom’ for 5min.
  2. If using frozen mango put into saucepan first to warm, then blend until smooth in blender or what ever you have.
  3. Put mango back in saucepan on low heat, add gelatin and stir constantly until dissolved.
  4. Pour mixture into a moulds and place in freezer while you prepare the coconut layer.

Coconut Layer ingredients:

  • 3 tbs Gelatin
  • 3 tbs water
  • 1 cup full fat coconut cream
  • 1/4 tsp vanilla
  • 1 tbs honey

Coconut layer method:

  1. Mix the gelatin with water and allow to bloom.
  2. Slowly warm coconut milk, vanilla and honey on low heat (use the same saucepan you used for mango).
  3. Add gelatin and stir constantly until gelatin has fully dissolved.
  4. Gently pour mixture on top of mango layer.
  5. Place in fridge to set for approx. 2 hours.

I’ve made these in moulds but you can simply use a glass dish and then cut into squares!
