Mango and Coconut Gummies Recipe
A simple and delicious gut loving treat that the whole family will love.
Mango layer ingredients:
- 2.5 tbs Gelatin
- 5 tbs filtered water
- 400g mango (fresh or frozen)
Mango layer method:
- Mix gelatin with water and allow to ‘bloom’ for 5min.
- If using frozen mango put into saucepan first to warm, then blend until smooth in blender or what ever you have.
- Put mango back in saucepan on low heat, add gelatin and stir constantly until dissolved.
- Pour mixture into a moulds and place in freezer while you prepare the coconut layer.
Coconut Layer ingredients:
- 3 tbs Gelatin
- 3 tbs water
- 1 cup full fat coconut cream
- 1/4 tsp vanilla
- 1 tbs honey
Coconut layer method:
- Mix the gelatin with water and allow to bloom.
- Slowly warm coconut milk, vanilla and honey on low heat (use the same saucepan you used for mango).
- Add gelatin and stir constantly until gelatin has fully dissolved.
- Gently pour mixture on top of mango layer.
- Place in fridge to set for approx. 2 hours.
I’ve made these in moulds but you can simply use a glass dish and then cut into squares!
